Last year I had so much fun creating my Healthy Halloween Treats blog post, that I couldn’t resist making another one this year! I hope you enjoy these simple, fun and healthy Halloween treats that are kid and adult-friendly (just ask my co-workers who got to try each recipe!) Yummy Mummy Apples Recipe

YUMMY MUMMY APPLES

Serves: 4

Ingredients

2 apples

8 dark chocolate chips

2 tsp honey (optional)

Lemon juice (optional)

Directions

  1. Cut your apples in half and use a peeler or knife (be careful!) to design the mummy shapes on the apples. Option to add some lemon juice to the apples to keep the flesh from browning.
  2. Place 2 chocolate chips on each apple half for the eyes. Option to use a drop of honey to make them stick!

 

Krispie Halloween Monsters Recipe

Serves: 18 or more

Ingredients

Rice Krispie Square

8 cups rice cereal

2 cups natural peanut butter (only ingredient on the ingredients list is peanuts!)

2 cups natural sweetener (we used maple syrup)

Eyes 

Greek Yogurt

Chocolate chips

Amount of each “eye ingredient” will depend on how many eyeballs you want your monsters to have (use your imagination!)

Natural Food Colouring (use as liquid in icing recipe)

3 cups water

1 cup purple cabbage leaves

1 cup diced beets

1 tbsp baking soda

Directions

Rice Krispie Squares

  1. Make the rice krispie squares by placing the rice cereal in a large bowl and setting it aside.
  2. Add the peanut butter and maple syrup to a large pot and simmer as you mix it until it is combined.
  3. Then add the sticky mixture to the rice krispies and combine with your hands.
  4. Add the mixture to a 9 x 13 inch pan and place in the refrigerator overnight. Make sure it is very sticky and fits tightly in the pan.

Eyeballs

  1. Make the eyeballs by placing drops of yogurt on parchment paper and add a mini chocolate chip on top.
  2. Place them in the freezer for at least an hour.

Natural Food Colouring (see blog post for more details)

  1. Make the red food dye by boiling 5 diced beets in 1 cup of water
  2. Make the purple food dye by boiling 2 cups of purple cabbage leaves with 2 cups of water
  3. Make the blue food dye by taking half the purple food dye and adding anywhere from a pinch to a tbsp of baking soda, and mixing it until it becomes blue.

Putting it all together! 

Once your rice krispie base is made and refrigerated, the eyeballs are frozen and the food colouring is prepared, you can have some fun making your monsters!

  1. Replace the liquid in your icing recipe with the natural food colouring. Mix well until the icing is the colour you are going for!
  2. Place the icing on the squares by letting it drip down from the top and slightly spreading it with a knife.
  3. Place the eyeballs on the monsters and place them in the freezer on parchment paper immediately.
  4. Let the monsters freeze overnight!
  5. Serve frozen and enjoy!

Spooky Skeleton Pretzels Recipe

Skeleton Pretzels

Serves: 10

Ingredients

10 pretzels

1 cup Greek yogurt

2 tsp milk (whatever kind you like: dairy, almond, coconut)

20 dark chocolate chips

Directions

  1. Use about ¼- ½ cup of Greek yogurt to make the eyes. Start by dropping small dots of yogurt onto parchment paper and top each dot with a mini chocolate chip. Place into freezer for at least 30 minutes.
  2. Mix the other half of the yogurt (1/2 cup) with 2 tsp of milk in a bowl. Whisk until the consistency is still creamy but thinner than normal Greek yogurt.
  3. Dip the pretzels in the yogurt and milk mixture using a fork and place on parchment paper. Place into freezer for 30 minutes. Remember to try and keep the mouth hole open (bottom hole of pretzel). If it gets filled, try to remove the mixture with a toothpick or just wait until it hardens and dab at it with a knife.
  4. Remove the pretzels from the freezer and dip them a second time if needed (you may need to make more mixture). Place them back in the freezer for 30 mins.
  5. When you are satisfied with your pretzel coats, remove the eyeballs from the freezer and place them on top.
  6. Serve right away (they will melt if left out on the counter for too long!) or store in freezer.
