1 cup fresh tomatoes, diced
1 can (540 ml) no-salt-added black beans, drained, rinsed well
1 can (341 ml) whole kernel corn, drained, rinsed well
2 tbsp extra-virgin olive oil
2 tbsp cumin
2 tsp paprika
1 tbsp black pepper
1 tsp salt
- Combine all ingredients in a large bowl and mix well.
- Serve with whole grain tortilla chips, pita bread, baked chicken or add to a wrap!
