1 ½ cups quinoa, uncooked
2 cups chickpeas
½ cup cucumber, diced
½ cup red bell pepper, diced
½ cup carrots, grated
1 royal gala apple, chopped
¼ cup green onions, chopped
3 tbsp extra virgin olive oil
2 tbsp lemon juice, freshly squeezed
1 garlic clove, minced
1 tbsp Dijon mustard
½ tsp freshly ground black pepper
- Cook quinoa as directed on package. When quinoa is cool, transfer to large mixing bowl and stir in remaining ingredients.
- Whisk dressing ingredients together. Pour over quinoa salad and mix well. Refrigerate for an hour before serving.
- If you are using canned chickpeas, drain and rinse the chickpeas very well to decrease the amount of added salt.
